Simple Sugar Syrup From Tea
With the heat and humidity outside today is a reminder that we are truly still in summer. As much as students are set to go back to school next week around here – and already have in many places – we can hope pleasantly warm weather will not leave any time soon. So it seems to be a good day to share another recipe which can be used as a cool treat.
Metropolitan Tea recently shared a method of making a simple sugar syrup using whatever tea strikes your fancy. Around here the fruit and herb teas are the favourite for this, though the rooibos varieties run a close second.
- Dissolve 1 cup of sugar in 1 cup of boiling water, then let simmer.
- Add 50 grams – 2 ounces – of tea and let simmer 5 minutes, stirring occasionally.
- Strain, cool and bottle. Will last in the refrigerator up to 14 days.
It works in slushy or icy drinks. Try drizzling some on ice cream, crepes or pancakes. Use your imagination!
